There are many formula for the herb blend ofZa’atarand many epithet for it fromZatar , Zahtar , toSa’atarandSatiradepending upon what country you are in . The confusedness really begins when the plant known asza’ataris added to the formula . The nomenclature as well as the type of plant life motley depending if you are in one of the Mediterranean nation , Israel , Egypt , Lebanon or North Africa . It is broadly tally upon by scholars and James Cook thatOriganum syriacumis the trueza’atarherb of choice . Other herbs that have been calledza’atarare hyssop ( as have-to doe with to in the Bible and the Talmud ) ; a species of savory(Satureja thymbra);Thymbra , the genus of bid , thyme - like plants(Thymbra spicata , T. capitatus ) . All of these plant have the same thing in plebeian — the chemical substance constituent carvacrol — which is what gives the “ oregano ” aroma , flavor and bite to the tongue .

Some blend use all thyme or all oregano while some merge the two . Origanum syriacum , the preferredza’atarherb can be ordered from a few select growers in the U.S. , or propagate cuttings if you farm it or know someone who does , or spell it from oversea from the region around the Mediterranean area to Israel . Origanum maru , which has incorrectly been used as a synonym forO. syriacum , is a loanblend thereof and is also available for sales agreement here from a number of source .

This past weekend I attend to the Plant Literacy Festival at the U.S. Botanic Garden , where I , along with staff members and herbalgalpals Laura Anthony and Holly Shimizu , prepared the herbaceous plant blend za’atar , mix it with olive oil and spread it on flatbread for visitors to taste . According to the three box of toothpicks that I impart for sample ( which we ran out of ) , at 250 per boxwood , we gave out over 750 tastes ! A few hundred people actually stopped at our demo table and used crisp sesame seed , thyme , oregano , oregano , sumach and sea salt to make their own portmanteau word to take home . I brought five of my mortars and pestles so they could crush the saltiness and offend the seeds and everyone had a noisy time ! It was a splendid Indian Summer sorting of mean solar day with blue skies and sunlight and the garden are peaking — they have replete out and are plushy . My favorites , besides the hang wall gardens , are the herbaceous plant and spice blends from around the mankind — and yes , there is a Za’atar Garden feature all of the plants that are called by this name .

I am writing from the Ozark Folk Center in Mountain View , Arkansas , where we are getting ready for the annual Herb Harvest Fall Festival . This year ’s base is Greece and Turkey have the plants from these land , along with food , dance and much more . We will get down tomorrow with a reception of tasty , homemadeMezeprepared by the Ozark Unit of the HSA followed by a Sumptuous Herbal Supper at the Skillet Restaurant , and then Greek dancing!Friday and Saturday , October 1 and 2 , we will have two Clarence Day of wonderful programs . Dr. Jim Simon from Rutgers will be speaking on basil and oregano andza’atar .

I have carried herbal cutting off from the USBG to transcend around for all to observe as well as for the nurseryman , Tina Marie Wilcox and Kathleen Connole , to make root cutting for the Heritage Herb Garden here . The gardens are striking here — their kitchen garden might be the skillful ever this year ( I ’ve been coming here for 15 eld ! ) . The basil plant life are up to my shoulder and the rosemarys are huge shrubs , the Chile are hang heavy on the vine and there is a Magenta Spreen lambsquarters that is over 8 - foot marvelous ! After Jim ’s programme on za’atar , we will have a make - and - take your own blend , before eating it for lunch with Greek Salad andFasoliki Gigantes .
