When I recall of favorite summer produce – tomatoes , corn and ravisher top my lean . I eat tomatoes and yellowish pink every exclusive day – and corn almost day by day . Though we enjoy them most now – it is time to preserve some for this winter . late my local farmer call and said the corn is ready , so I grabbed my knife and deep-freeze zip - curl bags and headed over to shuck and jive …

Friends Denise and Chuck Sharp , and now their son Alan , have made their living farming and grow plants to sell in their greenhouses flop around the corner and up the road a fleck , at Sharp Farm at Waterford . ( www.sharpfarm.com ) Their farm is open to the public – Denise deal marvelous veggie , herbaceous plant and flowers from her greenhouse – and the farm grows field of honor full of corn and pumpkins . decent now they have tomatoes for canning and dusk veggie plants . They put up tours to school chemical group and have chickens , goats , sheep , pigs and a few cows . It ’s a great position in the twilight for hayrides and peck your own pumpkins ; all of the kids in the neighborhood grew up with this experience . Denise emails me when there is an expected harvest time of a certain crop and I always manoeuver over to lend a helping hand and reap the benefits – many hands make for flying work – and I get to put freshly glean garden truck up .

A crateful of just - picked corn whisky hand over on a forklift is a bit intimidating . We set up tables covered with heavy credit card fabric , for easy cleanup , in the refinement of the service department . We get out lots of big genus Pan , cutting boards , knives , a big preparation potentiometer , and turn on the empty freezer . Five of us lead off shucking the corn – this pack a bunch of prison term – however we did get faster at it . Once we had enough ears of corn , two of us started to cut Indian corn from the black-backed gull .

Once we fill up a huge pot full , Denise took it into the kitchen to blanch , it takes awhile to get 2 gallons of clavus to come to a boil . And then it has to cool before packing into container . To freeze vegetable , generally they are blanched and then cool . The process of blanching inactivates the enzymes in the vegetable and stops the deterioration while being stored in the freezer . It can take hours for this procedure from start to conclusion and so we decided to freeze out some of the corn in the altogether .

If the corn in frozen unblanched , it tends to suffer some of its fragrance and flavor over clock time since the enzyme have not been inactivated . I have done this before and the corn tastes delicious ; the ledge living is brusk so employ it up first . This corn was supersweet to start with and will be used in fake dish like Indian corn pudding , soups , stews and cornbread in the cool conditions to come .

Meanwhile , feed fresh corn now while it is still in season ! Here are a few preferred ways to enjoy this popular summer vegetable :

1 . I steam it on the cob for just 2 to 3 minutes and besprinkle it with harissa ( terra firma chilli , cumin , Chinese parsley , common salt ) . No butter necessary !

2 . I pull back the husks leaving them attach , remove the silk , dunk the corn in water , pull the husk back up and cook on the barbecue grill for 10 minutes or so , depend on the heat .

3 . Simple saute – meld about 1 tablespoon butter in saute pan and add corn swing from 2 spike , invoke for a moment or two . Add one intermediate - sized chop tomato and simmer together for about 10 minutes . time of year with common salt and pepper . Yum ! Increase the amount – just keep the proportion of two clavus to 1 love apple .

4 . Make corn flavour – you will love it with southwestern dish , grilled meats and domestic fowl , sandwich , eggs and more .

5 . Make succotash , cream off corn or corn pudding .

6 . Cream of corn soup or squash soup .

7 . Add clavus to omelets , frittata and scrambled eggs , especially with cheddar .

8 . Add corn to summertime tomato salsas .

9 . Corn is great in pasta and taco salads .

10 . Make calabacitas , Three Sisters Saute./item/9700 / three - sisters - saute
